Caramelized Mushroom and Lentil Bowl with Tahini Dressing

This is the kind of bowl that satisfies completely without relying on meat. The caramelized mushrooms — cooked long and undisturbed until deeply browned and almost meaty in texture — are the heart of it. The lentils add substance and earthiness. The tahini dressing brings creaminess and sesame depth that ties everything together.

Ingredients

  • 250g (9oz) mixed mushrooms (cremini, shiitake, or king oyster)
  • 3 tbsp olive oil, divided
  • 3 garlic cloves, thinly sliced
  • 1 tsp fresh thyme leaves
  • Salt and black pepper
  • 120g (½ cup) dried green or brown lentils
  • 1 bay leaf
  • 1 small shallot, finely diced
  • 2 large handfuls spinach or kale, stems removed
  • For the tahini dressing:
  • 3 tbsp tahini
  • 2 tbsp fresh lemon juice
  • 1 garlic clove, finely grated
  • 3–4 tbsp water (to reach a pourable consistency)
  • Salt to taste

Method

1. Cook the lentils in well-salted water with a bay leaf until just tender, about 25 minutes. Drain, remove the bay leaf, and set aside.

2. Make the dressing: whisk tahini, lemon juice, grated garlic, and water until smooth and pourable. Season with salt. Set aside.

3. Tear the mushrooms into rough, uneven pieces — the irregular surface creates more area for caramelization. Heat 2 tbsp olive oil in your pan over medium-high heat. Add the mushrooms in a single, uncrowded layer. Do not stir. Leave for 3–4 minutes until deeply browned on one side, then stir and cook another 3–4 minutes.

4. Add the garlic and thyme to the mushrooms, season with salt and pepper, and cook another 2 minutes. Remove from the pan and set aside.

5. In the same pan, add the remaining olive oil and the shallot. Cook 2 minutes. Add the greens and cook until wilted, 1–2 minutes. Add the lentils, toss to combine, and season to taste.

6. Spoon the lentil and greens mixture into a bowl. Top with the caramelized mushrooms. Drizzle generously with tahini dressing. Serve immediately.

Julien Tip

The key to the mushrooms is patience and a dry pan. Stirring too early or crowding them causes steaming instead of browning, and you lose the meaty depth that makes this dish. Leave them alone and let the pan do the work.
