How to Cook with Carbon Steel

  • Preheat your pan moderately for 1–2 minutes before adding oil or food
  • Add a small amount of neutral oil — let it shimmer before adding ingredients
  • Use medium or medium-low heat; this pan responds quickly and holds temperature well
  • Works on all cooktops: gas, electric, and induction
  • Metal, wood, and silicone utensils are all fine

Oven Safety Note: Enzo Series pans have a wooden handle and are NOT oven-safe. Our 9" omelet pan with stainless handle IS oven-safe.

SEASONING

The good news: you're already doing it. Seasoning develops every time you cook with oil. No special ritual required.

Here is what you do after each cook to maintain the seasoning:

  • Let the pan cool slightly, then wipe out food residue with a paper towel while still warm
  • For stubborn or burnt bits, simmer some water to get them unstuck. Don't be afraid to scrub, if needed. Any lost seasoning will restore quickly with use.
  • Rinse with warm water — a small drop of dish soap won't hurt. 
  • Dry completely; a minute on the stove over low heat is ideal
  • While still warm, rub a very thin layer of neutral oil over the cooking surface with a paper towel
  • Store in a dry place

The pan will darken and develop a patina over time. That's not a problem. That's the point.

The Rules (There Aren't Many)

DO's:

  • Preheat before adding oil or food
  • Dry completely after every wash
  • Apply a light coat of oil before storing
  • Use on any cooktop, including induction
  • Scrub and re-season if rust ever appears

DONT'S:

  • Put it in the dishwasher
  • Leave it soaking in water
  • Store it while still damp
  • Put the Enzo Series in the oven — the wooden handles are not oven-safe
  • Panic about the surface darkening or color variation — that's patina, your new friend
