flagship line, the Enzo Series, is handcrafted in Tsubame-Sanjo — the same region in Japan that has been producing some of the world's finest metalwork for four centuries.
Nitriding is a heat-treatment process where carbon steel is super-heated in a nitrogen-rich environment. The result is a surface that is dramatically harder, more corrosion-resistant, and naturally non-stick — without any chemical coatings like Teflon or ceramic. The nitrogen bonds with the steel at a molecular level, becoming part of the pan rather than a layer on top of it.
Traditional carbon steel needs to be seasoned carefully before it performs well, and it is prone to rust if not maintained. Julien's nitrided carbon steel is impressive from the very first cook — it requires no initial seasoning ritual, resists rust far better than standard carbon steel, and delivers a non-stick performance that improves over time. Think of it as carbon steel that already had a head start.
Teflon and ceramic non-stick coatings degrade over time and eventually need to be replaced. Many contain PFAS — a class of synthetic chemicals with growing health and environmental concerns. We wanted to make a pan that is genuinely non-stick, completely free of coatings, and built to last generations. Nitrided carbon steel is that pan.
Yes. Julien pans contain no PFAS, PTFE, PFOA, or any other chemical coatings. The non-stick properties come entirely from the nitriding process and the natural seasoning that builds with use.
Every Julien pan is made in Tsubame-Sanjo, Japan — a city with a centuries-long tradition of precision metalwork. The craftspeople there are world-renowned for their expertise in forging, shaping, and finishing metal. We chose this region deliberately because that level of skill is simply not replicated elsewhere.

Yes — noticeably so. Unlike traditional carbon steel, which requires several rounds of seasoning before food releases cleanly, the Enzo Series performs impressively from the first cook. This is one of the most meaningful advantages of nitriding. The non-stick quality improves further with every use as a natural seasoning layer develops over time.
You don't need to complete a formal seasoning ritual before your first cook. A quick rinse, dry, and light coat of oil before your first use is all you need to get started. Seasoning develops naturally and gradually each time you cook — the more you use your pan, the better it performs.
Low to medium heat is ideal for most cooking. Julien pans very responsive, which means they heat quickly and respond immediately when you adjust the burner. You rarely need to go above medium. A pan that is too hot will cause food to stick or burn and can, over time, affect the pan's shape. Brief high heat — for searing a steak, for example — is fine; sustained high heat on an empty pan is not.
Yes, and this is one of the great satisfactions of an Enzo Series pan. Start on low heat, use a little butter or oil, and give the pan time to come to temperature evenly before adding your eggs. The nitrided surface releases eggs cleanly — even before a deep seasoning is built up.
Excellent. Carbon steel retains heat well and can handle the high surface temperatures needed for a proper sear. Bring the pan to medium-high heat before adding your protein, and do not move it once it's in the pan — let it release naturally when a good crust has formed.
We recommend avoiding prolonged cooking of acidic ingredients in your Julien pan, as acids can strip the seasoning layer. For a sauce deglazed with a splash of wine or a squeeze of lemon, you're fine. For a long-simmered tomato sauce, we'd suggest using a different pot and saving your Julien pan for what it does best.
CARE & CLEANING
While the pan is still warm, wipe it out with a paper towel or cloth to remove excess oil and food debris. For anything stuck on, add a small amount of warm water to the pan and bring it to a brief simmer on the stovetop — the residue will loosen easily. Rinse, dry thoroughly over low heat on the burner, and finish with a very thin wipe of oil before storing.
A small amount of mild dish soap used occasionally won't harm your pan. The nitriding treatment makes it more resilient than traditional carbon steel. That said, heavy soap use will strip the seasoning over time. For everyday cleaning, warm water and a stiff brush or cloth is all you need.
No. The dishwasher's combination of prolonged moisture, heat, and harsh detergent will damage your pan's seasoning and promote rust. Always hand wash.
Three habits will keep rust away: dry your pan completely after washing (a quick 30 seconds on a warm burner is the easiest way), never store it wet, and apply a thin coat of oil before putting it away. A well-seasoned, well-dried pan stored in a dry place will not rust.
Surface rust is easily fixed. Scrub the affected area with coarse salt and a little oil, or use fine steel wool. Once the rust is gone, rinse, dry, and re-season the pan on the stovetop with a thin coat of oil over medium-low heat. Your pan is not ruined — carbon steel is extremely forgiving.
Heat your pan over medium-low heat until it is warm. Apply a very thin, even layer of high-smoke-point oil to the entire interior surface with a paper towel. Continue heating until the oil just begins to smoke, then remove from heat and allow to cool. Repeat once or twice if needed.
COMPATIBILITY & SAFETY
No. The Enzo series features a hand-crafted beech wood handle. It will bring much pleasure and comfort to your stovetop cooking but it is not meant to see the inside of an oven.
Yes. Carbon steel is naturally magnetic and works on all cooktop types: induction, gas, electric, and ceramic. It can also be used over an open fire or on the grill.
In the event of warping, the Julien pans are good at reverting to original shape once cooled down but warping does throw a wrench in the dinner plans. Warping is most commonly caused by extreme temperature changes — placing a very hot pan in cold water, or heating an empty pan on high for an extended period. Always preheat gradually, starting on low or medium heat before increasing. Never plunge a hot pan into cold water to cool it. Use a burner size appropriate to the pan.
